Fresh Green Beans with garlic, bacon, and sliced mushrooms sauteed in a cast iron pan, a perfectly delicious low carb green bean side dish full of flavor!
Sauteed Green Beans and Bacon
This recipe is fairly straight forward and easy to do.
I am always a fan of altering recipes to make them your own, but in this case, make sure you use fresh green beans over canned or it wont have the same crunch that this side dish serves.

- 8 oz of Fresh Green Beans
- 4 oz Fresh Sliced Mushrooms (more if you like)
- 1 Tablespoon Olive Oil
- 1/2 tablespoon of Minced Garlic
- 1/4th cup cut Green Onions
- 4 slices of thick cut bacon – cooked
- 1 tablespoon of lemon juice
- salt
- pepper
Cast Iron Pans: (affiliate listed) The pans I love using the most are cast iron pans by LODGE.
These pans, that are shown in the images and video, are coated in a nonstick enamel but still give me the benefit of cast iron. I love that I can can throw them in the oven really easily. I bought them at TJ Maxx. Here they are on Amazon (about $25 cheaper at TJ Maxx if you can find them!).
Makin’ Bacon (literally)
When I start to cook a lot of side dishes with bacon, specifically around holiday times, I go ahead and cook up the whole package of bacon at once in my air fryer. Then I cut up for all my toppings and store in fridge (heat as needed). In this recipe, you can go ahead and make your bacon right in your cast iron pan and leave the bacon grease in place of the olive oil if you prefer.
The More Mushrooms the Better…
I use about 4 oz (half a container) of sliced mushrooms for this recipe as my husband isn’t a huge fan of mushrooms, but you could easily add the whole container to this recipe if you love mushrooms!

Combine Those Delicious Flavors!
To get started on this green bean recipe, cook the mushrooms.
Using either your bacon grease or 1 tablespoon of olive olive, heat up a pan to medium-low and saute mushrooms, salt, pepper and minced garlic until mushrooms are cooked through and soft, around 10 minutes.
While the mushrooms are cooking down, there isn’t much liquid in the pan so be careful not to turn up your pan too high and burn them.
Now add 8 oz of whole green beans (ends snipped) into the pan, stir, and place lid on top.
Cook green beans until crisp tender, about 10-12 minutes.
Once green beans are ready to eat the texture you want, remove from heat and add 1 tablespoon fresh lemon juice, stir, and top with crunchy bacon pieces.
Serve immediately.
This dish is also delicious as a main dish meal by adding cooked sliced sausage right to the pan.
Note about Sauteing Green Beans
The mushrooms provide the bit of water you need to saute properly in your pan.
If mushrooms do not produce much liquid, you may want to add 1 tablespoon of water while sauteing green beans to speed up cooking process.
Cast Iron Fresh Green Beans and Bacon
Saute your fresh green beans with delicious minced garlic, crispy bacon, and sliced mushrooms, an incredibly delicious and crisp green bean side dish worthy of the plate.
Ingredients
- 8 oz of Fresh Green Beans
- 4 oz Fresh Sliced Mushrooms (more if you like)
- 1 Tablespoon Olive Oil
- 1/2 tablespoon of Minced Garlic
- 1/4th cup cut Green Onions

- 1 tablespoon of lemon juice

- To get started on this green bean recipe, cook the mushrooms.
- Using either your bacon grease or if your bacon is precooked in the air fryer or another source, simply add 1 tablespoon of olive olive, heat up in a cast iron pan ( medium-low) and saute sliced white mushrooms, green onions, salt, pepper and minced garlic until mushrooms are cooked through and soft, which takes around around 10 minutes.
- While the mushrooms are cooking down, there isn't much liquid in the pan so be careful not to turn up your pan too high and burn them.
- Once mushrooms are cooked and soft, add 8 oz of whole green beans (ends snipped) into the pan, stir, and place lid on top. If there is no liquid (some mushrooms don't provide enough liquid) add 1 tablespoon of water to the pan first.
- Cook green beans until crisp tender, about 10-12 minutes.
- Once green beans are tender, remove from heat and add 1 tablespoon fresh lemon juice, stir, and top with crunchy bacon pieces.
- Serve immediately.
- This dish is also delicious as a main dish meal by adding cooked sliced sausage right to the pan and serving as a whole meal.
