Rolo Ritz Crackers

When my grandma makes Rolo Ritz Crackers, my kids light up — and to be fair, I get the appeal.

A gooey Rolo candy melting into a salty cracker, making a bite that’s crunchy, chocolatey, caramel-filled, and just the right mix of sweet and salty. Yes, please.

This is one of those recipes you can throw together in minutes with almost no cleanup.

Ingredients for Rolo Ritz Crackers

You only need two ingredients to make these:

  • Rolo candies – A 10.6 oz bag has about 50 candies.
  • Ritz crackers You’ll need 2 crackers for each Rolo. A standard 13.7 oz box has more than enough. I actually prefer using the knock-off butter crackers instead of the Ritz name brand because they’re a little less greasy.

Tip: If you’re scaling this recipe up, count your Rolos first so you know exactly how many crackers to set out.

How to Make Ritz Crackers with Rolos

Rolo Ritz cracker cookies are a quick 2-ingredient dessert you can make in under 10 minutes.

If you love the combo of chocolate, caramel, and the buttery crunch of Ritz crackers, this one’s for you. I wanted to share step-by-step pictures so you can follow along and make sure you are doing everything right.

Preheat oven to 350°F.

Arrange crackers top-side down on a baking sheet.

Unwrap Rolos and place one candy in the center of each cracker.

Bake for 3 minutes, just until the chocolate is shiny and soft (not melted flat). Don’t overbake! 3 minutes is enough to soften without burning the caramel.

Top with a second cracker (top-side up) and gently press so the chocolate and caramel spread evenly. Press lightly to avoid cracking the top cracker.

Cool at room temperature until set, or chill in the fridge to speed things up.

Store in an airtight container for up to 5 days at room temp, or freeze for up to 2 months.

Ingredients
 

  • 48 Ritz crackers
  • 24 Rolo candies unwrapped

Instructions

  • Preheat oven to 350°F.
  • Arrange 24 Ritz crackers, top-side down, on a baking sheet.
  • Place 1 unwrapped Rolo candy in the center of each cracker.
  • Bake for 3 minutes, just until the chocolate is shiny and softened. Do not overbake, 3 minutes is enough to soften without burning the caramel.
  • Remove from oven and immediately top each with a second Ritz cracker, top-side up. Gently press so the chocolate and caramel spread evenly. Press lightly to avoid cracking the top cracker.
  • Let cool at room temperature until set, or place in the fridge to speed up cooling.
