Ingredients

  • 2 cups elbow macaroni
  • 1 cucumber sliced in rounds
  • 1 large tomato chopped
  • 1 yellow red pepper seeded and chopped
  • 1/2 cup matchstick carrots
  • 1/4 cup diced red onion
  • 1 cup real mayonnaise
  • 1/4 cup milk
  • salt and pepper

Instructions

  • Cook macaroni according to package directions.
  • Drain and rinse with cold water to cool.
  • In a mixing bowl, add cucumber, tomato, red pepper, onion and carrots. Mix well.
  • Add mayonnaise and milk and mix to combine. Season with salt and pepper. Fold in macaroni.
  • Refrigerate for 4 hours or overnight.
  • Stir well before serving.
  • Serves 6-8
