There is no doubt that fresh seasonal peaches just pair with tomatoes and mozzarella like nothing has ever paired together before. The only problem with this unique Peach Caprese Salad is that its incredibly addicting and while healthy enough, its hard not to eat the ENTIRE bowl at once. Make this light salad with fresh ripe peaches at the height of summer. As a side note, if you dice down the ingredients, this recipe can also be easily altered into a perfect peach salsa dip.
12oz.fresh mozzarella cheesecut into bite sized pieces
1poundfresh ripe peachessliced
1/4th to 1/2 red onionsliced thin
8fresh Basil Leaveschopped
Black Pepper
Balsamic Glaze
Vinaigrette
3tablespoonsEVOO
1tablespoonLemon Juice
pinchof salt
Instructions
Prep if the key to great salads. Tomatoes should either be sliced thin or bite sized tomatoes. Slice peaches into thin slices OR bite sized pieces.
Slice red onions into thin slices and if wanted, soak in cold water for 30 minutes to take down some of the sharp onion flavor in fresh salads.
Cut fresh mozzarella into bite sized pieces. If preferred, use mozzarella pearls.
Tear or cut fresh basil leaves.
Add peaches into large salad bowl.
Dump tomatoes on top of peaches
Sprinkle fresh mozzarella pieces onto tomatoes.
Place sliced red onions into bowl.
in a bowl, whisk together olive oil, lemon juice, and a pinch of salt.
Pour dressing over salad and lightly and gently toss, covering all vegetables and fruit.
Crackle black pepper all over salad.
Scatter fresh chopped basil leaves around salad.
Drizzle Balsamic Glaze around salad.
Serve!
Notes
How long will salad store? Personally I find that this is a 1-2 day salad. Cut tomatoes and peaches do leak fresh juices that combine and make the salad softer. The best way to serve this salad is day of.
Any ingredient can be doubled. If you like more cheese, add more cheese. If you want more peaches, add more peaches.
