Easy creamy cheeseburger soup with hamburger, chunks of potatoes, a smattering of simple vegetables, and a delicious ridiculously cheesy base (made with fan-favorite and super melty Velveeta cheese) is a hearty, filling and so so satisfying dinner dish that is made in under 45 minutes!
Add ground beef, chopped celery, and chopped onions to a large stock pot.
Heat on medium-high heat, browning burger beef and cooking onions and celery. Drain any excess grease and return the beef mixture to the pan.
Add shredded carrots, cubed potatoes, dried basil, dried parsley, and salt and pepper.
Pour in beef broth and mix all ingredients together well. Cover soup and heat on medium high for about 8-12 minutes or until potatoes are fork tender.
Reduce stove heat to low and add the cornstarch slurry. Stir to combine.
Add in cubes of Velveeta cheese and milk and mix until cheese is completely melted and smooth.

Add bacon! Who doesn’t love bacon on their burger? Well, it tastes just as good mixed into hearty Cheeseburger Soup. I suggest using 1/2lb to 1lb bacon. Crumble and cook separately, draining excess fat. Stir into the soup with the cheese and mix well before serving.
Garlic: Everyone loves a bit of garlic powder or minced garlic, so if that is on your everyday cooking list, just add a bit into the step while the hamburger beef cooks.
For the most creamy of creamy soups, melt in a half a block of cream cheese.
