Preheat the oven to 400 and line a baking sheet with parchment paper.
Place eight slices of Brioche bread onto the baking sheet. Using your fingers, gently press the center of each slice of bread to create a divot or dent in the center of the bread. I do not like to get too close to the side of the bread. Be careful not to put a hole in the bread. Set baking sheet aside.
Whisk together plain Greek yogurt, honey, one egg, and ground cinnamon spice in a medium-sized bowl.
Spoon custard mixture into each divot in the bread, with about two tablespoons of custard filling in each of the bread slices.
Top with any combination or mixture of fresh fruit. It’s fun to get creative here and make beautiful designs.
Bake Custard Toast for 12-14 minutes or until the center is mostly set and the bread is golden brown and toasted on the edges.
Let bread stand for 5 minutes before sprinkling with powdered sugar and extra drizzle of honey.
