Avocado Cilantro Dressing is a deliciously rich way to pour those veggies right on your...veggies! Keto friendly, this homemade dressing gives you every excuse to indulge and in only 10 minutes to make and pour, even a cooking novice can handle recreation!
First, peel avocado skin and place fresh pieces of raw avocado into a food processor.
Add and blend ripe avocado, minced garlic, fresh herbs (cilantro), sour cream, juice of a lime, olive oil, minced onions, unflavored Greek Yogurt, salt, and black pepper into a food processor and process for 10 seconds.
Scrape down the sides of the bowl and process dressing ingredients for another 10 seconds. At this point, the dressing mixture will be too thick to pour. Now you can stop right here if you want to use this as an avocado sauce or even a dip for fresh vegetables or roasted vegetables, it’s a great recipe with healthy fats to compliment all the flavors that burst in a salad. However, if you want it to be a dressing and need it to be liquid to pour, keep going!
Add water, starting with 1/8 cup, and process for 5 seconds. If dressing is still too thick and you need a thinner consistency, add additional water and process until mixed well, smooth, and pours easily. Make sure to add water slowly as not to go overboard.
The minced onion needs time to soften up in dressing in the fridge before serving. If serving immediately, use 1/2 tsp onion powder OR 1 tablespoon freshly minced raw white onion for the same flavors.

**This recipe contains dried minced onion, which needs time to soften in the dressing to lose its "crunch". If wanting to serve this dressing immediately, dried minced onion can be substituted with 1/2 tsp. onion powder or 1 tablespoon raw white minced onion for a similar flavor profile.
When using fresh herbs, like fresh cilantro, handling the stems versus the leaves can be confusing. Make sure to do your best to use leaves only in this dressing, but it won’t be a huge deal if a few tiny stems make their way in as it’s a very blended dressing.
Try mixing flavors by changing out spices. For example, a bit of dill over cilantro makes it more like Green Goddess Dressing or changing the lime for fresh lemon juice.
Everyone has a different feeling on how thick a dressing should be. For example, I like to scoop out my ranch dressing, so it coats the salad. It’s so easy to make rich avocado dressing super creamy, thin, thick, and scoopable – from dips to dressings, just blend to the texture you love, adding a tiny bit of water if needed to thin.

Store dressing tightly covered in the refrigerator.
Remember that avocado turns brown when left in the air, so your dressing can turn brown at the top if not properly sealed in an airtight container.
One trick I use is to put a covering of plastic wrap over the top of my stored dressing to help keep more air out. Then peel off the plastic wrap, scoop or scrape off any oxidized avocado and serve.
