Grease a 9 x 13 casserole baking dish with nonstick cooking spray and preheat oven to 350 degrees.
In a large bowl, add frozen shredded potatoes, plain Greek yogurt, Campbells condensed cream of chicken soup, 1/4 cup (half stick) melted butter, salt, onion powder, shredded cheddar cheese and diced ham and mix well.
Spread ham potato mixture evenly into prepared casserole dish.
Top casserole with Rice Krispie Cereal and drizzle all over with remaining 1/2 stick of melted butter.
Bake casserole for 40-50 minutes in the oven or until bubbly around the edges and hot in the center.
Can real potatoes be used over frozen potatoes?
Absolutely. If you want to do the work of shredding down hash browns, simply remove skins and use a cheese grater. Yukon gold potatoes would work great.
Do shredded potatoes have to be frozen?
No, if you grab the fresh defrosted bag of shredded potatoes, that is totally fine as well.

Yes, you can make ham and potato casserole ahead of time. Mix together and place in casserole dish. Cover with foil and refrigerate. Cook on 350 for approximately 50 minutes. Please note that occasionally you may need a few extra minutes as ingredients may be super cold from the fridge.
What kind of topping goes well on potato casserole?
