Roasted Breakfast Potatoes with garlic and chili powder are a delicious way to wake up! Done in the oven in under 30 minutes, these potatoes are quick to prepare but pack a lot of delicious punch. Potatoes allow you to serve big crowds as well as fill up for the day and are everyone's favorite morning side dish.
5 Medium Sized Red Potatoes - cut in chunks, leave skin on
1tablespoongarlic powder OR minced garlic
salt to taste
2tspchili powder
1/4th cup Extra Virgin Olive Oil
Instructions
Pre-heat oven to 450
Wash red potatoes, then cut into fork sized chunks. Be careful not to dice to small or they will burn and cutting too large will take longer to cook. Please see article for example.
Add cut red potatoes in a large bowl and drizzle olive oil over potatoes.
Add garlic, chili powder and salt (to taste) and mix up red potatoes. Garlic and chili powder should cover and be present on all potato sides. PRO TIP: This is easiest to do with clean hands.
Spray large baking sheet with nonstick spray.
Dump seasoned red potatoes out in one layer on baking sheet, careful not to overlap potatoes.
Roast red potatoes for approximately 20 minutes, turning half way to ensure even cooking and crispiness on all sides.
Potatoes are done when they are fork tender but have golden color on the outside.
