Add vegetable oil, cut up sausage, sliced or chopped onion and seeded diced jalapeno pepper to a large skillet and heat on medium heat for 5-7 minutes or until sausage is browned and onions are tender.
Add minced garlic, frozen corn, red peppers, tomatoes and okra.
Stir in vinegar and season well with salt and pepper.
Continue to heat on medium heat, stirring frequently about 7-10 minutes until heated through.
