2cupschopped or shredded chicken breastcooked (see note on chicken below)
29oz.mandarin oranges(reserve 1/4th cup juice)
1teaspoondry ginger
1/3cuprice vinegar
1/4cupvegetable oil
1.9oz.Lipton dry onion soup mix
1teaspoonminced garlic
1tablespoonwhite sugar
8ouncesbowtie/farfalle pastacooked, drained and rinsed in cold water
1/3cupsliced almonds
Instructions
Mandarin Orange Dressing
Drain the mandarin oranges, and measure out 1/4 cup of the juice. Set the oranges aside for the salad and pour the juice into a small mixing bowl. Discard the rest of the juice (or save it for a second batch of dressing!).
In the bowl with the orange juice, add the dry ginger, vinegar, oil, onion soup mix, minced garlic, and sugar. Mix everything together really well, and let the dressing sit for 30 minutes so the flavors meld.

Make Asian Pasta Salad
In a large mixing bowl, add all the prepped veggies—cucumber, bell pepper, red onion, and carrots—along with the chicken and drained mandarin oranges. If you’re serving the salad right away, go ahead and toss in the sliced almonds. But if you’re planning to store it, wait until just before serving to add the almonds so they stay nice and crunchy. Mix.
1/2 cucumber, 1/2 red bell pepper, 1/2 cup red onion, 1/2 cup matchstick carrots, 29 oz. mandarin oranges, 1/3 cup sliced almonds, 2 cups chopped or shredded chicken breast
Stir in the cooked and cooled bow tie pasta. Pour the dressing over the salad, and toss until everything is evenly coated.
8 ounces bowtie/farfalle pasta
Serve your pasta salad immediately, or cover and refrigerate it until you’re ready to serve. If you refrigerate it, be sure to give it a good stir before serving since some ingredients may settle.
