Instructions
Prep the Bacon - Bacon must be cooked before you start this recipe. You can use pre-cooked microwave bacon, but we suggest crisping in the air fryer as it can be flimsy. Arrange the bacon slices in a single layer in your air fryer and cook at 320°F for 3 minutes. Drain and blot any excess grease with a paper towel, then set aside to cool.
Homemade bacon can also be used. Use an air fryer bacon recipe, skillet fry, or make in the oven. Make sure there is no extra grease and the bacon is cool before con continuing the recipe.
Pancake Batter: Prepare the pancake mix according to the package instructions, aiming for a quantity that yields about 9-11 pancakes. This amount is ideal for ensuring each bacon slice gets a generous coating.
Cooking: Heat a nonstick skillet over medium heat. Dredge a slice of precooked bacon in the pancake batter, ensuring both sides are evenly coated. Carefully place the coated bacon in the skillet and cook for 2-3 minutes on each side until golden brown. Be gentle to avoid breaking the bacon, especially if it's thin and crispy.
Serving: Serve the bacon pancake dippers hot, accompanied by a side of maple syrup for dipping. The combination of savory bacon with the sweetness of the syrup is delicious!
Notes
Can I use thick-cut bacon? Yes, thick-cut bacon works well too. Just remember to adjust the cooking time accordingly and possibly add a bit more pancake batter to maintain a good balance. See the full article for tips on cooking bacon.
How do I store leftovers? Store any leftover dippers in an airtight container in the refrigerator. Reheat in a toaster oven or microwave when ready to enjoy again.
Can I add flavors to the pancake batter? Absolutely! Feel free to mix in some vanilla extract, cinnamon, or even a bit of sugar to the batter for added flavor. Do not thin out the batter too much.
