Bacon Wrapped Pickles with cream cheese and crispy bacon are a 20 minute simple appetizer perfect for a party platter or an afternoon snack. Keto, low carb snack!
Preheat oven to 400 and line a baking sheet with parchment paper. I am a big fan of parchment paper because it always helps prevent sticking.
Cut bacon in half lengthwise, so you have 2 long strips from each one strip of bacon. Cutting down bacon helps cook it quicker.
Remove pickles from jar and drain and discard excess juice.
Use paper towels to dry pickles off.
Slice a small strip of cream cheese and lay across the top of the pickle.You may want to cut the small strip in half so one strip fits onto the pickle.
Wrap pickle and cream cheese in bacon, making sure edges are on the bottom of the pickle sheet side down, and place on prepared baking sheet.
Repeat until all pickles are covered.
Bake pickles for 12-18 minutes or until bacon is cooked and pickles are hot.
