Ingredients

chicken breasts
about 1.5 lbs

cup
barbecue sauce
1
cup
mozzarella cheese
or provolone/Monterey Jack
1
cup
pineapple chunks
drained and cut smaller
1/4
cup
red onion
sliced and chopped

bacon
cooked and crumbled before recipe starts
Salt and pepper
Fresh chives
chopped for garnish
Instructions
NOTE: If you are adding bacon, make sure its cooked before you start this recipe.
Preheat oven to 375°F and lightly grease a 10-inch cast iron skillet or a casserole dish.
Arrange chicken breasts in the skillet in a single layer and season with salt and pepper.
Spread barbecue sauce evenly over the chicken, then top with mozzarella cheese.
Add pineapple, red onion, and bacon, dividing evenly among the chicken breasts. Cut pineapple smaller if the chunks feel too large for a bite.
Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
Optional: Sprinkle with fresh chives before serving.
