8ouncesbrie cheeserind removed and cut into 1/2" pieces
2cupchopped fresh spinach
8eggs
3cupsmilk
salt and pepper
Instructions
Add butter, mushrooms, onion and garlic to a large saucepan and heat over medium heat. Stir frequently and cook until mushrooms are soft and onions are tender and translucent, about 7-8 minutes. Remove from heat.
Grease a 9x13 baking dish with nonstick cooking spray and add chopped bread. Top with mushroom and onion mixture. Top with cheese and spinach.
In a bowl, whisk together eggs and milk. Season with salt and pepper. Slowly pour on top of bread mixture. Cover and refrigerate until ready to bake.
When ready to bake, remove from refrigerator while preheating oven. Preheat oven to 375 and bake, uncovered, for 35-45 minutes or until edges begin to brown and center is set when a knife is inserted in the center.
Let strata stand for 5-10 minutes before serving hot.

This recipe could feed 8-12 depending on the amount each person ate and if it was a main dish or a side dish.
