Preheat and Melt Butter: Place the stick of butter in a 9x13 baking pan. Put the pan in the oven and then preheat it to 350°F. Let the butter melt while the oven heats, about 5-6 minutes. Take the pan out once the butter is melted.
Layer Chicken and Vegetables: Spread the cooked, cubed chicken evenly over the melted butter in the pan. Then, add the frozen vegetables on top of the chicken.
Prepare Biscuit Mix: In a bowl, combine the biscuit mix and the seasoning packet. Add 2 cups of milk to this and whisk well until smooth. Pour this biscuit mixture over the chicken and vegetables in the pan. Don’t stir it in.
Add Broth and Soup: In another bowl, mix the chicken broth and cream of chicken soup. Carefully pour this over the biscuit layer in the baking pan. Again, do not mix.
Bake Casserole: Place the pan in the oven and bake for 45 minutes. It’s done when the edges are bubbly, the top is lightly browned, and the center is cooked. Please note that all ovens cook at different rates and you may need up to 10 additional minutes. For a more brown top, broil for a few minutes before serving.
Rest and Serve: After taking the pan out of the oven, let it stand for 15 minutes. Then, it’s ready to serve hot!
