Chicken Parmesan Pasta Skewers combine cooked chicken, penne pasta, marinara sauce, and melted mozzarella on a skewer for a fun, easy dinner kids and adults can both enjoy.
Skewers trimmed to 10 inches (if needed) to fit baking dish
Ingredients
6ouncesdry penne ritorte pasta
2chicken breastscooked and cooled
1cupmarinara sauce
1 1/2cupsshredded mozzarella cheese
Chopped fresh basilfor serving
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Cook penne according to package directions until al dente. Drain well.
Cut cooked chicken into approximately 1-inch cubes.
Thread 2 pieces of pasta and 1 piece of chicken onto a skewer, repeating until you have about 3 pieces of chicken. Add an extra piece or two of pasta as needed to fill the skewer. I used about 8 pieces of pasta per skewer. Place completed skewers onto the prepared baking sheet.
Brush marinara sauce over the pasta and chicken using a pastry brush. Top with shredded mozzarella cheese.
Bake for 10-12 minutes, or until the cheese is melted and the chicken is hot throughout. If reheating refrigerated leftover chicken, heat to 165°F.Remove from the oven and top with chopped fresh basil before serving.
Notes
*makes approx. 6-8 skewers depending on size of skewers and how big you cut the chicken.*For the chicken used in this recipe, I seasoned the breasts with salt, pepper, poultry seasoning, and garlic powder before cooking.
