This Mediterranean inspired Chicken Zucchini Bake is a healthy, family-friendly dinner made with juicy chicken, zucchini, sweet tomatoes, and melted cheese. It’s naturally high in protein and makes delicious leftovers. With just a handful of simple ingredients, you’ll have a flavorful one-pan meal that’s quick to prep and easy to serve.
2chicken breastscubed into ½-inch pieces (uncooked)
2zucchini squashcut into half rounds
1cupgrape tomatoeshalved
½red onionthinly sliced
1tbspminced garlic
2tbspolive oil
1cupshredded mozzarella cheese
½cupgrated Parmesan cheese
¼tspred pepper flakesoptional, for spice
Instructions
Preheat oven to 375°F and lightly grease a 9x13 baking dish.
In a small bowl, mix together oregano, paprika, basil, salt, pepper, and (optional) red pepper flakes.
In a large mixing bowl, combine chicken, zucchini, tomatoes, onion, garlic, and olive oil. Sprinkle the seasoning mix on top and toss until everything is evenly coated. Spread the mixture into the prepared baking dish.
Top with mozzarella and Parmesan cheese. Cover with foil and bake for 20 minutes.
Remove foil and bake for another 10–15 minutes, until the cheese is melted and lightly golden and the chicken reaches 165°F.
Notes
For a crunchy finish, mix some panko breadcrumbs into the cheese before sprinkling it on top.
