Layered chicken club sandwich with deli chicken meat, artisan cheese, lettuce, tomatoes, and bacon, all wrapped in 3 separate layers of toasted bread. Great for appetizer tray or lunch.

Instructions
Begin by toasting the 6 slices of bread.
Spread approximately 1/2 tablespoon of mayonnaise on one side of a toasted bread slice.
On top of the 1st slice of bread, place 1 slice of Colby Jack Cheese, 3 slices of Chicken Breast Lunchmeat (we fold them side by side in a row versus stacking), a slice of Tomato, and a layer of Romaine Lettuce.
With the second piece of of toasted bread, spread 1/2 tablespoon of mayonnaise on one side, and position it mayonnaise-side-down on the lettuce. This is the middle of the sandwich.
On top of that bread, add 3 more slices of Chicken Breast Lunchmeat, Tomato slice, bacon (sliced to fit bread), and finally close with a last piece of lettuce.
Finish the sandwich with the third slice of toasted bread, mayonnaise-side-down.
Slice the assembled sandwich diagonally into two parts, then slice again to create 4 triangle pieces. Secure each piece with a toothpick to keep the sandwich together. You may not need to use the toothpick if you are eating immediately, but if you are serving on a tray, it prevents the layers from falling a part.
Repeat the process for another sandwich.
Notes
You can make the layers as thick as you want. For example, some people like to double or triple the meat. A club sandwich can also add or remove ingredients you like or want to add. Adding layers of avocado, sliced pickles, black olives, or additional condiments like honey mustard or ranch dressing. If you do not want deli chicken, use ham or roast beef or a combination of them.
