This birthday cake cheese ball is a fun and festive dessert made with cream cheese, butter, funfetti cake mix, powdered sugar, vanilla, and rainbow sprinkles. It tastes like cake batter in dip form, making it a party-perfect treat to serve with vanilla wafers, graham crackers, or pretzels.
Heat-treat the cake mix: Spread the Funfetti cake mix evenly on a baking sheet and bake at 350°F until it reaches 160°F internally (about 5 minutes). This ensures the flour is safe to eat. Let it cool completely before using.
In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. (Tip: letting both soften to room temperature makes mixing easier and prevents lumps.)
Add the cooled cake mix, powdered sugar, vanilla extract, and 1/4 cup of the rainbow sprinkles. Continue beating until fully combined and smooth.
Scoop the mixture onto a piece of plastic wrap, shape into a ball, and wrap tightly. Refrigerate for at least 2 hours or overnight to let it firm up.
Roll the chilled cheeseball in the remaining sprinkles until fully coated. Serve with vanilla wafers, graham crackers, or pretzels for dipping.
Notes
Note about heating treating flour - you can usually microwave flour as well, in 30 second intervals, until the safe temp is reached. This is done out of an abundance of caution for e coli.
