This garlic fried rice is my go-to when I need something quick and tasty. It’s packed with garlic, peas, carrots, and scrambled eggs. I cook the rice in chicken broth for extra richness and finish it off with a splash of soy sauce. It’s perfect as a side dish or even a meal on its own.
(If you have precooked rice or are using a rice cooker, skip this step) Add the uncooked rice and chicken broth to a saucepan. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is fork-tender. Set aside.
1 cup uncooked white rice, 2 cups chicken broth
Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Then, add the peas, carrots, and onions. Cook for about 5 minutes, stirring frequently, until the onions are tender.

Add the cooked rice to the skillet and stir well to combine with the veggies and garlic. Continue to cook for another 5 minutes, stirring occasionally to get a nice texture on the rice.
Push the rice mixture to the side of the skillet, creating a well in the center. Pour the beaten eggs into the well and scramble them. Once the eggs are cooked, mix them into the rice.

Stir in the soy sauce, ensuring all the ingredients are evenly coated. If desired, drizzle with 1 teaspoon of sesame oil for a more intense flavor.

Serve the garlic fried rice topped with fresh chopped green onions, if you like. Enjoy it as a side dish or on its own!

Notes
If you're using pre-minced jarred garlic, you can substitute 1/2 teaspoon of jarred garlic for each clove of fresh garlic. So, for 4 cloves of garlic, you would use 2 teaspoons of pre-minced garlic.
