These easy Halloween deviled eggs look like little pumpkins! Classic deviled egg filling is colored orange, piped into swirls, and topped with fresh chive stems for a festive party appetizer.
Prepare the eggs. Cut hard-boiled eggs in half lengthwise. Carefully scoop the yolks into a small mixing bowl and arrange the egg whites cut-side up on a serving platter.
Make the filling. Thoroughly mash the egg yolks with a fork until finely broken up. Make sure there are no large chunks, since they can clog the piping tip. Add mayonnaise and mustard, season with salt and pepper, and mix until creamy.
Color the filling. Add orange food coloring a little at a time, mixing until the filling is evenly colored. I used AmeriColor Orange Gel, which gives the filling a nice orange color without adding much liquid.
Pipe the pumpkins. Transfer filling to a pastry bag fitted with an open star piping tip. I used a Wilton 4B, but a smaller size 32 tip should also work. Pipe a swirl of orange filling into each egg white cavity, allowing the ridges to form the pumpkin shape.
Add pumpkin stems. Cut fresh chives into pieces about 1/2 inch long. Insert one piece into the top of each piped filling to create a pumpkin stem.
Finish and serve. Sprinkle with paprika if desired. Serve immediately or cover and refrigerate until ready to serve.
