Ice Cream Bread is a 2 ingredient bread with any flavor ice cream and self rising flour. Super simple, this viral tiktok recipe uses up left over gallons of ice cream to create a simple, fun and kid friendly dessert bread. Try multiple flavors!
Generously spray loaf pan with non-stick cooking spray.
Crush peppermint candies to bite sized bits. One way to crush peppermints is to add in a gallon sized baggie and hit with a rolling pin. Additionally, peppermint candies also come crushed in bags if you can find them (seasonal).
Add 2 cups of ice cream to a microwave safe bowl.
Microwave ice cream for about 10 seconds to soften but not melt.
Combine softened ice cream with self rising flour and fold mixture together with a spatula. Do not bother using a hand mixer because the ice cream gets caught in the middle too easily.
Pour ice cream bread dough into prepared loaf pan.
Sprinkle top of bread with crushed peppermint prior to baking.
Place pan in oven, at 350 degrees, for 35-40 minutes or until a toothpick comes out clean. Please remember that oven times vary depending on the type of oven you have and even the location that you live, so I always start checking baking times at 30-35 minutes.
Once ice cream bread is baked and cooled, slice and serve.

Can regular all purpose flour be used? No, self rising flour or homemade self rising flour must be used. Self rising flour is regular flour, salt and baking powder. Here is a recipe on self rising flour from other pantry ingredients.
