Preheat oven to 400°F and line a large baking sheet with parchment paper.
Add ground Italian sausage to a skillet and heat over medium-high heat, stirring frequently and breaking the meat apart until browned and no longer pink. Remove from heat and drain excess grease if necessary.
Add 1/4 cup cottage cheese and 1/4 cup pasta sauce to the skillet with the cooked sausage. Mix well and set aside.
Place one tortilla on a flat surface. On one half of the tortilla, add 1 tablespoon pasta sauce, 3 heaping tablespoons sausage mixture, and 2 tablespoons shredded mozzarella cheese.
Starting on the filled side, roll the tortilla tightly and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
Spread the remaining pasta sauce over the tops of the rolled tortillas and top with the remaining shredded mozzarella cheese. Bake for 10 minutes, or until heated through and the cheese is melted.
Turn the broiler to high and broil for approximately 2 minutes, watching closely, until the cheese is bubbly and lightly browned.
Remove from oven and sprinkle with chopped fresh parsley, if using. Serve immediately.
