Maple Bacon Brussels Sprouts, with whole or halved Brussels Sprouts, are a savory and sweet Brussels Sprout side dish with real maple syrup and lots of crispy bacon.
Preheat oven to 400 and line a baking sheet with parchment paper.
Grease the parchment paper generously with baking spray.
In a mixing bowl, mix together halved Brussels sprouts, olive oil, and real maple syrup.
Add uncooked bacon and mix the Brussels Sprouts side dish really well to coat all the vegetables
Season Brussels Sprouts with salt and pepper and mix everything together again until well seasoned and covered.
Place maple syrup Brussels sprouts onto prepared baking sheet, spreading out bacon so it's on a single layer.
NOTE ABOUT SUGAR: If you pour the bowl and there is excess maple syrup on the baking sheet, that will caramelize in the oven and burn on your sheet. Its not a big deal but it could smoke or turn black, so I do my best to not let excess syrup hit the sheet.
Bake sprouts for approximately 12-20 minutes or until bacon is fully cooked and Brussels sprouts are roasted and slightly crispy.
Turn them over half way between cooking so both sides get slightly crispy.

USING WHOLE BRUSSELS SPROUTS
When Brussels Sprouts are cooked whole, they take much longer to cook and get more caramelized on the outside.
Preheat oven to 400 and line a baking sheet with parchment paper.
Grease the parchment paper generously with baking spray.
In a mixing bowl, mix together Brussels sprouts, olive oil, and maple syrup.
Add uncooked bacon and mix the Brussels Sprouts side dish really well to coat all the vegetables
Season your Brussels Sprouts with salt and pepper and mix everything together again until well seasoned.
Place maple syrup Brussels sprouts onto prepared baking sheet, spreading out bacon so it's on a single layer.
Bake for approximately 30-40 minutes or until bacon is fully cooked and Brussels sprouts are roasted.
Turn them over half way between cooking so both sides get slightly crispy.

COOKING TIMES:
Cooking Brussels Sprouts isn't necessarily a challenge, but they can go from done to real done in just a few minutes. When you cut them in half, they cook really quickly. I always set my oven timer (on a fully pre-heated oven) for 10 minutes and then add on 5 and check and so on and so forth. I like mine just slightly browned but not burnt- I have a gas oven.
The parchment paper WILL brown in the oven on this recipe - I always use it so the Maple Syrup covered Brussels Sprouts don't stick to the pan
