Maple Bacon Sweet Potatoes (Roasted & Glazed)
Maple Bacon Sweet Potatoes - fresh roasted sweet potatoes combined with maple syrup glaze and smothered in bacon and onions. A great holiday (or every day!) side dish recipe.

sweet potatoes
peeled and cut into 1/2" cubes

vegetable oil

bacon
cut into 1" pieces, left raw

onion
thinly sliced

cup
pure maple syrup
1
tsp.
dry thyme
Instructions
Preheat the oven to 425 and line a baking sheet with foil. Set aside.
Mix diced sweet potatoes and vegetable oil together in a bowl.
Spread sweet potatoes, in a single layer, on the baking sheet.
Season generously with salt and pepper. Roast potatoes for 20 minutes.
Flip sweet potatoes and roast for an additional 20 minutes. Remove from oven and loosen potatoes from foil if necessary. Set the sheet pan aside.
Add raw bacon to a skillet and heat over medium heat until pieces are browned.
Add sliced onions and cook on low for 10-15 minutes or until onions are soft.
Add pure maple syrup and heat on medium heat until boiling.
Boil for 3-4 minutes stirring occasionally.
The mixture will foam and bubble.
Add roasted sweet potatoes to glaze and mix well, covering all potatoes.
Serve dish topped with dry thyme.
Notes
