Mini cucumber sandwiches feature a creamy dill and cream cheese filling topped with crisp English cucumbers and a sprinkle of everything bagel seasoning. They are perfect for gatherings as a light, refreshing appetizer. They are easy to make ahead—assemble, refrigerate, and garnish before serving. Instructions
In a bowl, combine cream cheese, mayonnaise, minced fresh dill, and chopped chives. Season the mixture with salt and pepper to taste, and stir until well blended.

OPTIONAL FOR DECORATION: Reserve 1-1/2 tablespoons of the cream cheese mixture, transferring it into a pastry bag fitted with a large tip. If you do this, you will need a large, open tip. Don't try a star, even a large star, as the onions and herbs need to get out of the tip, and they won't. I used a Wilton Tip #32, which is an open star. Set aside the pastry bag for later.
Spread the remaining cream cheese mixture evenly onto each of the six slices of whole wheat bread.
Place a single layer of 9 thinly sliced English cucumber pieces on three bread slices. Sprinkle each generously with everything bagel seasoning.

Top with another slice of bread, creating three packed cucumber sandwiches.
6 slices whole wheat sandwich bread
Using a bread knife, carefully remove the crusts from the sandwiches and discard them. Slice each sandwich diagonally into four rectangles.
Arrange the mini sandwiches on a serving platter. Pipe a small dollop of the reserved cream cheese mixture on top of each sandwich using the pastry bag and garnish with a sprinkle of fresh dill.
Serve immediately or cover and refrigerate until ready to serve.
Notes
To soften cream cheese quickly:
Microwave: This is not good for all recipes as some do not want any melted version. Cut the cream cheese into small pieces, place in a microwave-safe bowl, and heat in 10-second intervals, stirring between each, until soft.
Room Temperature: Leave unwrapped cream cheese block on the countertop for about 30 min. before you need it.
Warm Water Bath: Seal a block of cream cheese in a watertight plastic bag and submerge it in warm water for 10-15 minutes.
