Mini Oreo Toffee Bark is a homemade Christmas candy made with whole Mini Oreo cookies, buttery brown sugar toffee, melted chocolate, and festive sprinkles. A fun twist on traditional cracker toffee.
Preheat oven to 400°F. Line a 10 x 15-inch rimmed baking sheet with aluminum foil and generously coat with nonstick cooking spray.
Arrange whole Mini Oreo cookies in a single layer across the baking sheet, keeping them close together. Check that the cookies are properly assembled with their cream filling before placing them in the pan. Set aside.
In a medium saucepan, melt butter over medium-high heat. Add brown sugar and stir constantly until the mixture begins to boil. Continue boiling for 2 minutes while stirring.
Carefully pour hot toffee over the arranged Mini Oreos, spreading it across the cookies. Bake for 4 minutes.
Remove from the oven and evenly add chocolate chips or finely chopped chocolate almond bark. Return to the oven for 2 minutes to soften the chocolate.
Remove from the oven and use a knife or the back of a spoon to spread the softened chocolate into an even layer. Immediately add Christmas sprinkles while the chocolate is still soft.
Cool completely at room temperature or allow the pan to cool before transferring to the refrigerator to finish hardening. Once firm, cut into pieces with a sharp knife. The pieces may be uneven because of the round cookies underneath the chocolate.
