Preheat oven to 350°F and lightly spray a 9x13 baking dish with nonstick cooking spray.
Peel, core, and cut the apples into 8 wedges each. Its best to use one of the apple slices so all pieces are same shape for even cooking. Separate the crescent rolls and place one apple wedge at the wide end of each piece of dough, wrapping it up tightly. Set the dumplings seam side down in the prepared pan. The recipe makes 16 dumplings, though depending on how you arrange them you may only fit 15; lining them in two neat rows also works if you prefer a more traditional look.
Stir melted butter and sugar together until combined, then pour the mixture evenly around the dumplings in the pan. Carefully pour Mountain Dew (or Sprite/7 Up) around the edges, not directly on top, so the rolls stay golden and crisp while the liquid bakes into a syrupy sauce underneath. Sprinkle each dumpling with a little cinnamon.
Bake for 40–45 minutes, until the dumplings are golden brown and the sauce is bubbling at the edges. Let cool slightly before serving so the syrup can thicken. Enjoy warm on their own, or add a scoop of vanilla ice cream if you like, they’re already very sweet, but the ice cream is always a fun touch because of the apples.
