This refreshing onion salad is a quick and easy side dish. With crisp white onions and a creamy, tangy dressing, it's perfect for BBQs, burgers, or family dinners. The soaking process mellows the onions, making this simple recipe a crowd favorite! Also great for burger toppings.
4large white or yellow onionssliced into rounds and separated
Marinade
1/2cupgranulated white sugar
1/4cupcold water
1/4cupwhite vinegar
Onion Salad Dressing
1/2cupreal mayonnaise
1tablespoonpoppy seeds
salt and pepper
Instructions
Slice the raw onions into 1/8" rounds and separate the layers by hand. Place them into a large mixing bowl and set aside.

In a small bowl, combine sugar, water, and vinegar. Stir until the sugar is fully dissolved. Pour this mixture over the sliced onions and stir to ensure all slices are well coated. Cover and refrigerate, stirring every hour for 3 hours. The stirring makes sure all parts of the onion are exposed to the sugar water, which helps reduce the bite of the onion. After marinating, drain the liquid from the onions. Dry them off to reduce moisture.

In a separate bowl, mix the mayonnaise and poppy seeds, then stir this into the onions to coat them evenly with the dressing. Use tongs if you have any trouble spreading the dressing.
