Delicious and easy melting potatoes with soft white centers and brown crispy outsides, can be made with or without skins, for a side dish compatible with almost any menu or meal.
Cut potatoes into thin, even slices - mine were about 1 inch thick.
Place potatoes, oil and butter into an ovenproof skillet ( I like cast iron) and heat over medium heat, browning potatoes on each side, about 5 minutes each.
Sprinkle potatoes with spices and add chicken broth directly to the skillet.
Oven Bake the potatoes for an additional 15 minutes or until potatoes are tender and liquid is almost all evaporated.
Top side with chopped fresh parsley (or chives) and serve immediately while hot.
Notes
Typically 6 medium potatoes are approximately 2 lbs. Serving size is really difficult because it just depends on how many pieces each person eats, so to calculate nutritional properly, you will need to add this recipe to your app. Although most people eating potatoes do not count calories, haha. For the sake of this recipe, I am going to calculate half a potato a piece, based on 6 potatoes, is 12 servings.
