Pickle Cookies is an old fashioned recipe that takes hamburger pickles (dill pickle slices), Ritz Crackers and cheese and combines them into a delicious pickle treat with tons of pickle flavor! Just take out a pickle and remove any excess pickle juice, layer onto crunchy cracker and your favorite sliced cheese and melt until ready. This snack is done in mere minutes and brings new meaning to the word cookie as a cheese and cracker appetizer.
Line a baking sheet with parchment paper. Place 20 crackers onto the baking sheet and top with pickles.
Cut each slice of cheese into 4 small squares and top each pickle with cheese.
Bake for 5 minutes or until Colby Jack cheese is melted over cracker. Let pickle cookies stand for 1 minute before serving.
