large rainbow carrots

sesame oil

rice wine vinegar

tablespoon
soy sauce

tablespoon
honey
Splash of lemon or lime juice

Sesame seeds
for topping
Chopped fresh chives
for garnish
Instructions
Wash and peel the carrots, discarding the outer skin.
Using a vegetable peeler, shave the carrots into long, thin ribbons. Place them in a mixing bowl.
In a separate bowl, whisk together sesame oil, rice wine vinegar, soy sauce, honey, and citrus juice if using.
Pour the dressing over the shaved carrots and toss to coat evenly.
Cover and refrigerate for at least 1 hour to chill and allow the flavors to blend.
Before serving, top with sesame seeds and chopped chives.
