Preheat oven to 350°F. Line a baking sheet with parchment paper.
Slice bread lengthwise into two halves. Place cut side up on baking sheet.
Brown ground beef in a skillet. Drain grease. Stir in sloppy joe sauce. Divide the mixture in half and spoon half of the sloppy joe mixture onto one of the slices of bread. Repeat with the other slice of bread.
Top each with 1½ cups cheese. Bake for 10 minutes until cheese is melted.
Let cool slightly, then slice carefully with a bread knife. Top with jalapeños if desired.

Additional Tips
Mix in diced jalapenos for some heat directly in the meat.
While this bread is not pre-toasted, you can also toast the halves FIRST or make into garlic bread and then proceed with adding on the sloppy joe mixture.
