Slow cooked sirloin steak combined with red and green peppers makes the most wonderful crockpot Pepper Steak! This easy, simple weeknight meal with tons of flavor and no work. Eat as is, or serve tender pepper steak with a delicious pile of steamed rice or egg noodles for a filling and family favorite meal. Slow cooker pepper steak also makes great leftovers so enjoy this one twice this week.
To get started, you will want to sear your beef. Add oil and beef sirloin to a large skillet. Sprinkle sirloin strips with garlic powder (or minced garlic if you prefer) and season generously with salt and cracked pepper.
2 tablespoons cooking oil, 2 lbs beef sirloin, garlic powder, salt and black pepper
Heat beef over medium high heat and brown meat on both sides to give a nice seared flavor and color. Place sirloin beef strips in bottom of slow cooker.
Prepping the Bell Peppers and Onions
Slice your bell peppers and onions into long strips. Add peppers and onions to slow cooker on top of beef. Open and add canned diced tomato. Mix all ingredients well in slow cooker.
1 green pepper, 1 red pepper, 1 onion, 14.5 oz. diced tomatoes
Prepping the Beef Gravy
In a small bowl, add HOT water and bouillon and mix well. (If you have powdered beef bouillon, it works really well to mix quicker). Please note that it is fine to double or triple the gravy recipe.
1/4 cup hot water, 1 cube beef bouillon
Stir in corn starch to hot beef broth, whisk together, and pour gravy mixture into slow cooker. Add soy sauce and sugar to slow cooker and mix well.
Place lid on slow cooker and cook on low for 6-8 hours or high for 3-4.
Mix slow cooker pepper steak well before serving over steamed white rice or egg noodles.

For a thicker gravy
To make a thicker gravy, add 1 tablespoon cornstarch to a tad bit of COLD water (just enough to liquefy cornstarch) and mix in with pepper steak 30 minutes prior to serving.
