Beef Up Dinner with Slow Cooker Sirloin Tip Roast! Dinner's secret weapon? Juicy tender beef sirloin tip roast! Let the crockpot do the work while you take all the credit for a mouthwatering meal with homemade mushroom and onion gravy!
Season the Ribs: Place beef short ribs in a large skillet and sprinkle them generously with Montreal steak seasoning.
Brown the Meat: Turn the stove to medium-high heat. Cook beef pieces until they're browned on the outside. (They don't need to be fully cooked inside.)
Transfer to Slow Cooker: Remove from the skillet and place in the slow cooker.
Add Veggies & Flavors: In the same skillet, combine diced onion, sliced mushrooms, Worcestershire sauce, minced garlic, and soy sauce.
Stir in a packet of beef stew mix, a packet of gravy mix, beef broth, and water.
Cook the Gravy: Cook gravy on medium heat until the mixture starts to bubble. Then, lower the heat and let it simmer for an additional 10 minutes.
Pour Gravy Over Ribs: Carefully pour the gravy mixture into the slow cooker over the browned ribs.
Cook on Low: Set the slow cooker to low and cook for approximatly four hours. See notes for large cuts of beef.
Serve: Place mashed potatoes on plates, top with tender beef, and generously pour over the gravy.
Notes
Because this dish has tons of delicious gravy, we recommend serving it over hearty mashed potatoes. That said, it can also go over white rice or be served alone alongside vegetables. Whatever cut of meat you use, be sure its cut into about 1-inch chunks. If meat is larger, you may need to adjust cooking time to account for bigger cut slow cooking.
