Instructions
Season both sides of the chicken breasts with salt, pepper, and poultry seasoning. Note that the soup has salt in it, so salt to taste.
Place the seasoned chicken in the bottom of your slow cooker. Spoon the cream of chicken soup and sour cream over the chicken. Use a spoon or spatula to gently stir the soup and sour cream together, combining them without disturbing the chicken too much. Sprinkle the diced onion and dried parsley evenly over the mixture.
In a separate bowl, combine the stuffing mix and melted butter. Stir well until the stuffing is evenly coated. Spread the buttered stuffing mixture evenly over the top of the creamy soup layer in the slow cooker.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
