Ingredients

potatoes
peeled and cut into 1/2" pieces
1
tablespoon
vegetable oil
2
tablespoons
butter
1
head fresh broccoli
cut into small pieces
1/2
cup
diced white onion
1-1/2
cups
chopped ham
8
eggs
1/4
cup
milk
3/4
cup
shredded cheddar cheese
more if you like
salt and pepper
Instructions
Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray. Set aside.
In a skillet, add potatoes and oil and heat on medium high, covered for about 10 minutes, making sure you stir frequently until potatoes are cooked.
Pour into prepared casserole dish.
Add butter, broccoli and onion to skillet and heat over medium high heat, covered until broccoli is cooked and onions are tender. Spoon over potatoes.
Spread ham on top of broccoli and onion mix.
In a mixing bowl, add eggs, and milk and whisk well. Season with salt and pepper.
Stir in cheese.
Pour over vegetables and ham.
Bake for 40-45 minutes or until a knife stuck in the center comes out clean and edges are browned.
Serve immediately.
