Enjoy a homemade tomato bisque with fresh tomatoes and cream, a comforting and easy-to-make soup. It's made with fresh tomatoes, garlic, onions, and basic seasonings, blended into a smooth soup that's great with croutons or grilled cheese. Perfect for a simple weeknight meal, this bisque is satisfying on its own or as a starter.
In a casserole dish, combine the tomatoes, onion, garlic, and red pepper. Drizzle with olive oil, toss to coat, and season with salt and pepper. Top with fresh basil leaves.
Roast the vegetables for 20 minutes, then let them cool slightly.
In batches if necessary, blend the roasted vegetables until smooth and transfer to a soup pot.
Stir in the chicken broth, tomato paste, sugar, dried oregano, and dried basil. Heat to boiling on medium-high, then simmer covered for 10 minutes.
Remove the pot from heat, stir in the heavy whipping cream, and season with additional salt and pepper if needed.
Serve the soup in bowls, optionally garnished with shredded cheese, croutons, and additional fresh basil.

Should I peel the tomatoes?I leave my tomatoes whole and don’t peel them. Tomato skins are really healthy, and since I’m blending it all down at the end I don’t really notice the skins.
