Instructions
Preheat your oven to 400°F and line two baking sheets with parchment paper.
Slice the onions into ¼-inch thick rings. Do not separate the rings within each slice.
Add about 1 tablespoon of freshly shredded Parmesan cheese to the baking sheet, forming a small circle slightly larger than your onion ring.
Press an onion ring into the cheese, then sprinkle another tablespoon of cheese on top to cover it completely. Each onion ring should be sandwiched between two layers of cheese.
