Season chicken thighs with salt, pepper, paprika, and garlic powder.
Place seasoned chicken thighs into the air fryer basket and cook for 12 minutes on Air Crisp at 375 degrees. Let cool slightly and remove from the air fryer.
Cut chicken into small pieces and set aside.
In a blender or food processor, combine cottage cheese, hot sauce, and dry ranch seasoning. Blend cottage cheese mixture until smooth.
Combine cheese mixture with cooked chicken and mix well.
Divide chicken mixture into 4-6 servings and place each on one warm tortilla.
Top with shredded Mozzarella cheese.
Wrap a large tortilla into a burrito and place it into a hot skillet, cooking on both sides until the tortilla is browned. Serve immediately.
