Preheat oven to 350 and grease a 9x13 baking dish with nonstick cooking spray. Set aside.
Add uncooked beef and diced onion to a large skillet and heat over medium-high heat, browning beef and cooking until onion is translucent. Drain excess grease.
Add beef mixture to the prepared baking dish.
Stir in chopped cabbage, tomato sauce, uncooked white rice, and seasonings, and mix well.
Pour beef broth on top and spread evenly into the pan.
Cover the casserole dish with foil and bake for 1 hour.
Remove foil, stir the casserole mixture and cover again, baking for an additional 20 minutes.
Let cabbage casserole stand for 5 minutes before serving.
Notes
Try mixing up the extra flavor by adding chopped red pepper to the beef while sauteeing, doubling the rice for a more robust casserole, or adding a can of Rotel tomatoes or pepper flakes for some spice. Try adding Worcestershire sauce and minced garlic to power up the meat. To save time, purchasing pre-chopped or shredded Cabbage or coleslaw works excellently. Every household likes a different flavor or has a favorite spice or seasoning. Nutmeg, garlic, hot sauce, and Italian seasoning make great choices when deciding what to dig out of the pantry.
