Cauliflower Chicken Fried Rice recipe, healthy and hearty Chinese Stir Fry with less calories and carbs, perfect weeknight family meal using riced cauliflower, peas, and delicious bites of chicken.
1cupchicken breastcubed cut into 1/2" pieces (uncooked)
1tablespoonvegetable oil
6slicesbaconcooked and cut into small pieces
1cupfrozen peas and carrots
12oz.frozen cauliflower rice(keep bag frozen)
4eggs
1tablespoonmilk
2tablespoonssoy sauce
chopped green onionsoptional for extra flavor
Instructions
In a large skillet, add cubed or diced chicken and vegetable oil. Heat chicken for 5 minutes or until browned on both sides and cooked through. Chicken should reach 165 degrees to be cooked.
As a side note, if you have uncooked bacon, it is fine to add the bacon to this same pan and cook in the same pan as the chicken.
Add frozen peas and carrots and frozen cauliflower rice to a non-stick skillet or cast iron pan. If bacon was already pre-cooked, add at this stage.
Heat vegetable chicken mixture on medium, stirring frequently until all ingredients are hot and heated through.
In a small mixing bowl, combine eggs and milk and whisk well.
Make a well in the center of the cauliflower mixture (which is a circle) and pour eggs into center.
Heat until eggs are scrambled and then mix into chicken fried cauliflower rice.
Serve chicken cauliflower rice topped with freshly chopped green onions.
