High Powered Blender Like a Vitamix or Ninja Foodi
Ingredients
1stalkcelerymine was about 1-1/2 lbs
2teaspoonslime juice
1/2cupcold water
Instructions
As a note, a "stalk" of celery is the entire bunch, not one piece. One piece of celery is called a rib.
Wash the celery stalk and discard ends. Chop into 1" pieces and place into the blender. Add lime juice and water. Cover and blend until smooth. If necessary, scrape down the edges of the blender so all of the celery is incorporated.
Place 2 layers of cheesecloth into a bowl or large measuring cup. Pour celery pulp into the cheesecloth and gently wrap the cloth around the pulp. Using your hands, squeeze all of the liquid out of the pulp. Take care to get out as much juice as possible. This can take a few minutes.
When finished, remove the cheese cloth and discard the pulp into a compost bin.
Pour celery juice into a glass and enjoy or cover and refrigerate until ready to drink.
Notes
If you want to enhance or change up the juice, add juice from sweet fruits like apples, pineapple, watermelon, or strawberries. This juice also goes great with a sweeter veggie like carrot juice or combined with a light juice like cucumber.
