Corn and Tomato Salad with Feta
Delicious corn and tomato salad with fresh feta cheese coated in a simple lime dressing, is an easy 15 minute homemade side salad that compliments most recipes and is perfect for bbqs, picnics, and parties.

Ingredients
30
oz.
canned corn
drained well
1
cup
cherry tomatoes
chopped
1/4
cup
red onion
chopped
1/4
cup
thinly sliced fresh basil
OR 1/2 tablespoon dried basil (not recommended)
1/3
cup
feta cheese

tablespoons
olive oil
2
teaspoon
lime juice
salt and pepper to taste
Instructions
Add fully drained corn, halved cherry tomatoes, chopped onion and fresh basil to a mixing bowl and mix well.
30 oz. canned corn,
1 cup cherry tomatoes,
1/4 cup red onion,
1/4 cup thinly sliced fresh basil
In a smaller bowl, combine olive oil and lime juice and mix together well.
2 tablespoons olive oil,
2 teaspoon lime juice
Pour lime dressing on top of corn and tomatoes and season generously with salt and pepper.

Mix in feta cheese crumbles and refrigerate covered (usually 1-2 hours) until cold.
1/3 cup feta cheese
Stir corn and tomato salad well before serving.
