NOTE: If you need to substitute dried basil in a pinch, you can, but nothing really takes the place of a FRESH basil for this recipe so try to use it if possible.

How to make Corn & Tomato Salad

  1. Add corn, cherry tomatoes, onion, and basil to a mixing bowl and mix well.
  2. In a smaller bowl, combine oil and lime juice and mix well.
  3. Pour on top of corn and tomatoes and season with salt and pepper.
  4. Mix in feta cheese and refrigerate covered until cold and ready to serve.
  5. Stir well before serving.

Can I use Frozen Corn? Canned Corn? Grilled Corn? 

YES, on ALL of those.

  • If you use canned corn, ensure it’s drained of excess liquid. Canned corn has many flavors, and roasted canned corn is great for this type of salad. 
  • Frozen corn needs to be thawed (leave it in the fridge overnight or on the counter the day of) and then drained of excess liquid.
  • Fresh corn – make sure it’s boiled or grilled and use a kernel remover to remove the corn, which I demonstrated in this pressure cooker corn on the cob recipe

Delicious corn and tomato salad with fresh feta cheese coated in a simple lime dressing, is an easy 15 minute homemade side salad that compliments most recipes and is perfect for bbqs, picnics, and parties.

Ingredients
 

  • 2 cans 15 oz each, corn, drained well
  • 1 cup chopped cherry tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup thinly sliced fresh basil OR 1/2 tablespoon dried basil
  • 2 tablespoons olive oil
  • 2 teaspoon lime juice
  • salt and pepper to taste
  • 1/3 cup feta cheese

Instructions

  • Add fully drained corn, tomatoes, onion and basil to a mixing bowl and mix well.
  • In a smaller bowl, combine oil and lime juice and mix well.
  • Pour lime dressing on top of corn and tomatoes and season well with salt and pepper.
  • Mix in feta cheese and refrigerate covered (usually 1-2 hours) until cold.
  • Stir corn and tomato salad well before serving.
