An easy 15-Minute Corn and Tomato Salad recipe with simple lime dressing and feta cheese, this cold side salad can be made with canned, fresh, or frozen corn!

There’s something about the combination of sweet corn and cherry tomatoes that just screams summer. Paired with a simple tangy lime dressing, this salad is not only delicious but also works for a bunch of different occasions.
As a side dish for grilled meats, a fresh addition to potlucks, or even a light lunch on its own, this tomato and corn salad is just perfect.
And a lot of recipes say 15 minutes but do not mean it – this recipe is ready FAST!
Ingredients
- canned corn – drained really well
- cherry tomatoes, cut in half
- red onion
- fresh basil
- olive oil
- lime juice
- salt and pepper
- feta cheese
NOTE: If you need to substitute dried basil in a pinch, you can, but nothing really takes the place of fresh basil for this recipe, so try to use it if possible.
How to make Corn & Tomato Salad
- Add corn, cherry tomatoes, onion, and basil to a mixing bowl and mix well.
- In a smaller bowl, combine oil and lime juice and mix well.
- Pour on top of corn and tomatoes and season with salt and pepper.
- Mix in feta cheese and refrigerate covered until cold and ready to serve.
- Stir well before serving.
Alternative Cheese Options for Corn Salad
The sharp, delicious taste of feta is perfect in cold corn salad side dishes like this. That being said, cheese can be a very personal taste to so many and I wanted to offer a few alternatives if you do not like feta cheese crumbles.
- Queso Fresca
- Goat Cheese * this is my favorite alternative to feta
- Blue Cheese Crumbles
- Small bits of Fresh Mozzarella
- Cotija

- Fiesta corn salad also uses Rotel which I think could work well in this dish in a pinch. It might make it more dip-like but it would work.
Can I use Frozen Corn? Canned Corn? Grilled Corn?
YES, you can use any kind of corn.
- If you use canned corn, ensure it’s drained of excess liquid. Canned corn has many flavors, and roasted canned corn is great for this type of salad.
- Frozen corn needs to be thawed (leave it in the fridge overnight or on the counter the day of) and then drained of excess liquid.
- Fresh corn—make sure it’s boiled or grilled and use a kernel remover to remove the corn, which I demonstrated in this Ninja Foodi corn on the cob recipe

Ingredients
- 30 oz. canned corn drained well
- 1 cup cherry tomatoes chopped
- 1/4 cup red onion chopped
- 1/4 cup thinly sliced fresh basil OR 1/2 tablespoon dried basil (not recommended)
- 1/3 cup feta cheese
- 2 tablespoons olive oil
- 2 teaspoon lime juice
- salt and pepper to taste
Instructions
- Add fully drained corn, halved cherry tomatoes, chopped onion and fresh basil to a mixing bowl and mix well.30 oz. canned corn, 1 cup cherry tomatoes, 1/4 cup red onion, 1/4 cup thinly sliced fresh basil
- In a smaller bowl, combine olive oil and lime juice and mix together well.2 tablespoons olive oil, 2 teaspoon lime juice
- Pour lime dressing on top of corn and tomatoes and season generously with salt and pepper.salt and pepper to taste
- Mix in feta cheese crumbles and refrigerate covered (usually 1-2 hours) until cold.1/3 cup feta cheese
