Cast Iron Cranberry Pie with fresh cranberries, this homemade pie (alos known as cranberry cake)) is a great holiday dessert or Christmas Breakfast recipe.
Preheat oven to 350 and grease a 10" cast iron skillet with oil. Set aside.
Mix together flour, sugar, and salt. Stir in cranberries and walnuts, and mix well.
Add melted butter, eggs, and vanilla extract and mix well until combined.
Spread cranberry mixture into prepared pan.
Bake for 40 minutes or until edges are browned and a toothpick inserted in the center comes out clean. All ovens operate at different heating levels, so please monitor yours for exact timing.
Remove from oven and let cool.
Slice and serve when slightly warm. Makes 10-12 slices and great to serve with morning coffee.
Notes
Frozen cranberries can be used. Just defrost, remove any excess liquid and proceed with the recipe. Toppings are half the fun of eating pie! Try adding orange zest, a vanilla glaze, or a scoop of vanilla ice cream (like you would with apple pie). Toss some granulated sugar over the top for 5 minutes for a nice sugary topping.
