cooked and drained of excess grease

frozen, refrigerated or pantry

Instructions
Brown sausage according to package directions. Drain grease if desired and place sausage into a 6 quart slow cooker.
1 lb. Italian Sausage
Add carrots, celery, onion, spices, canned tomatoes, and chicken broth to the slow cooker and mix well. Cover crockpot and set on low for 6-8 hours.

4 cups chicken broth,
1 tsp salt,
2 tsp. Italian Seasoning,
¼ tsp ground pepper,
1 tbsp minced garlic
Remove the lid and add tortellini, frozen spinach, and heavy whipping cream. Stir well.
16 oz. cheese tortellini,
5 oz. frozen spinach,
1½ cups heavy whipping cream
Cover and set on high for 20-30 minutes or until the tortellini is cooked.
Serve soup immediately topped with shredded Parmesan cheese and a dash of red pepper.

Notes
Leftovers are great, and if it becomes too thick (that pasta keeps absorbing liquids) just add a little more chicken broth!
