Instructions
Open Faced Cucumber Bites - For Platter
In a medium bowl, combine the softened cream cheese, mayonnaise, minced dill, and chopped chives. Season the mixture with salt and pepper to taste. Mix well until smooth and creamy.
Spoon the cream cheese mixture into a pastry bag fitted with a large opening tip.
Slice the bell peppers into small triangles.
Pipe a dollop of the cream cheese mixture onto each cucumber slice.
Press a bell pepper triangle on top of each cucumber slice with cream cheese.
Serve immediately, or cover and refrigerate until ready to serve.
Double Stacked Cream Cheese Cucumber Bites
In a medium bowl, combine the softened cream cheese, mayonnaise, minced dill, and chopped chives. Season the mixture with salt and pepper to taste. Mix well until smooth and creamy.
Spoon the cream cheese mixture into a pastry bag fitted with a large opening tip.
Take one cucumber slice and pipe a dollop of the cream cheese mixture onto it. Place another cucumber slice on top to create a small sandwich.
Thread a chunk of bell pepper onto a toothpick and gently press the toothpick through the cucumber sandwich.
Repeat the process until all the cream cheese mixture and cucumber slices are used.
Serve immediately, or cover and refrigerate until ready to serve.
