Cucumber Cream Cheese Bites

If you’re looking for a fresh and tasty appetizer that’s sure to impress your guests tastesbuds, you’ve got to try my recipe for cucumber cream cheese bites. My go-to for parties because they’re super easy to make (and I hate getting stuck in the kitchen before a party), this is one recipe I get asked for all the time.

The cool crunch of the cucumber with the creamy, herby filling is just summer flavor perfection. I’m going to share two of my favorite versions and they use the same ingredients: stacked cucumber bites and my single open-faced cucumber appetizer tray. Let’s goooooooooooooooo.

Cream Cheese Cucumber Bites

Ingredients:

  • 4 ounces cream cheese, softened
  • 2 tablespoons real mayonnaise
  • 1 tablespoon minced fresh dill (plus additional for garnish)
  • 1 tablespoon chopped chives
  • Salt and pepper
  • 1 English cucumber, sliced 1/8″ thick
  • Red, orange, and yellow bell peppers, seeds removed and chopped

How to make Stacked Cucumber Bites

This version requires 2 cucumber slices and create a little cucumber sandwich. It makes makes 18-24 about appetizers.

  1. In a medium bowl, combine the softened cream cheese, mayonnaise, minced dill, and chopped chives. Season the mixture with salt and pepper to taste. Mix well until smooth and creamy.
  2. Spoon the cream cheese mixture into a pastry bag fitted with a large opening tip.
  3. Take one cucumber slice and pipe a dollop of the cream cheese mixture onto it. Place another cucumber slice on top to create a small sandwich.
  4. Thread a chunk of bell pepper onto a toothpick and gently press the toothpick through the cucumber sandwich.
  5. Repeat the process until all the cream cheese mixture and cucumber slices are used.
  6. Serve immediately, or cover and refrigerate until ready to serve.

Commonly Asked Questions:

  1. Can I prepare these appetizers in advance? Yes, you can prepare them a few hours ahead of time. Just make sure to cover and refrigerate them to keep them fresh. Cucumbers notouriously have water in them so I wouldnt make them more than a few hours a head of time.
  2. Can I use different herbs in the cream cheese mixture? Absolutely! Feel free to experiment with your favorite herbs or switch up the cream cheese flavors. The store typically has a variety of kinds on the shelf so find something unique.
  3. What if I don’t have a pastry bag? You can use a small ziplock bag and cut off one corner to pipe the cream cheese mixture. Or if you are confident with portioning, just use a spoon and divvy it all up.
  4. Can I use other vegetables as a topping? Yes, cherry tomatoes or small slices of radish would also work pretty good. I like having the different colors that bell peppers come in.

Make Cucumber Bite with One Piece

Ingredients:

  • 4 ounces cream cheese, softened
  • 2 tablespoons real mayonnaise
  • 1 tablespoon minced fresh dill (plus additional for garnish)
  • 1 tablespoon chopped chives
  • Salt and pepper
  • 1 English cucumber, sliced 1/8″ thick
  • Red, orange, and yellow bell peppers, seeds removed and chopped

This recipe makes approx. 36-48 appetizers and is great to add to platters.

  3. Slice the bell peppers into small triangles.
  4. Pipe a dollop of the cream cheese mixture onto each cucumber slice.
  5. Press a bell pepper triangle on top of each cucumber slice with cream cheese.
  6. Serve immediately, or cover and refrigerate until ready to serve.

  1. How thin should the cucumber slices be? About 1/8″ thick is perfect. You want them thin enough to be bite-sized but thick enough to hold the toppings.
  2. Can I use flavored cream cheese? Just like the stacked version, flavored cream cheese can add an extra layer of taste. Garlic and herb or chive-flavored cream cheese are great options.
  3. What’s the best way to slice the cucumbers? Using a mandoline slicer will give you even slices, but a sharp knife works well too.
